Bicarbonate of Soda vs Baking Soda: What’s the Difference?
Bicarbonate of soda and baking soda are the same ingredient—sodium bicarbonate. The only difference is the name: “bicarbonate of soda” is used in Ireland and the UK, while “baking soda” is common in the US.
It works as a leavening agent in baking. When mixed with acidic ingredients like yogurt, lemon juice, or vinegar, it releases carbon dioxide, which helps doughs and batters rise and gives baked goods a light, fluffy texture. Unlike baking powder, it needs an acid to activate properly.
